A special summer entrée ... meat pie

Pie on the menu usually suggests a dessert, but we have enjoyed this pie entrée which conforms to our diet needs. It has a layered construction and requires 1/3 pound of ground turkey, a medium-sized chopped onion, ½ can drained black beans, ½ cup frozen corn, ½ can salt-free tomatoes, 1/3 cup picante sauce and 3/4 cup low-fat shredded Cheddar cheese. For the topping, you’ll need ½ cup Bisquick mix, ¼ cup low-fat milk and 2 ounces of Eggbeaters, plus one cup of potato chips for the “crust.”

Begin by sautéing the ground turkey with the chopped onion in 1 tablespoon of canola oil. Then add the tomatoes, beans, corn and picante sauce and simmer.
