Putting a different twist on menu items is the objective of the owners of Café Evergreen.

For example, they use sheep cheese because it is healthier than a cow cheese and better than goat cheese. They also serve Kefir water, home brewed by the owners who believe this filtered, alconized and ironized water is much healthier than tap or bottled water.
