Embarking on changing an existing restaurant may initially seem straightforward, but can lead to numerous problems. Although not insurmountable, the original time frame for completion can run over several months and even longer as one local owner has discovered.
It was Christmas, 2012 when Anita Nikolov decided to improve her family restaurant — called Anita’s Family Restaurant — in Nokomis. Explaining her intentions to an architect, it immediately became apparent she needed much more preparatory work by engineers.
